Indian Paneer recipes are of wide range.Paneer is also known as cottage cheese having its origin in the Indian subcontinent. It is also called Chana. In ancient India it was the most common type of cheese used in traditional South Asian cuisines. Although it is available in the market it can be prepared at home as well. It is usually prepared by adding lemon juice, vinegar, citric acid or yogurt to hot milk to separate the curds from the whey. The curds are then drained in a muslin or cheesecloth and the excess water is pressed out. The formed paneer is then soaked in water for 2-3 hrs to give it a good texture and appearance. The use of paneer is more common in Nepal, India, Pakistan, and Bangladesh due to the prominence of milk in their cuisine. Palak paneer is a famous north Indian dish containing a rich spinach gravy to which pieces of panner wrapped in dough and deep-fried are added. Mattar Paneer is another preparation made of peas to which the paneers are added in the same way. Rasgulla which is a popular sweet in Bengal is made of chana beaten by hand and shaped into balls which are soaked in syrup.
